Ingredients:
- 8 slices of bread
- 1 bunch of asparagus, trimmed
- 1 tablespoon olive oil
- Salt and pepper to taste
- 6 ounces goat cheese, softened
- 2 tablespoons chopped fresh herbs such as thyme, basil, or parsley
- 4 slices of provolone cheese
- Butter for spreading
Instructions:
Set a grill or grill pan over medium-high heat to get it hot
Cut the asparagus into pieces and put them in a bowl
Add olive oil, salt, and pepper
About 4 to 5 minutes on each side, grill the asparagus until its soft and lightly charred
Take it off the grill and set it aside
On one side of every slice of bread, spread goat cheese
Put fresh herbs that have been chopped on top of the goat cheese
On half of the bread slices, put a slice of provolone cheese on top of the goat cheese and herbs
A second slice of provolone cheese and grilled asparagus spears should be added on top
Put the other slices of bread on top, goat cheese side down
Put butter on the outside of each sandwich
Place the pan on medium heat
It will take about 34 minutes per side to cook the sandwiches until they are golden brown and the cheese melts
Take it out of the pan, cut it up, and serve it hot
