Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- 1/2 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
- 1/2 cup semisweet chocolate chips
- 1/4 cup chopped peanuts optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a medium-sized bowl, sift together the all-purpose flour and cocoa powder
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs, one at a time, mixing well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients to the wet mixture, alternating with the whole milk, beginning and ending with the dry ingredients
Mix until just combined
Scoop the cupcake batter into the prepared muffin tin, filling each liner about 2/3 full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely
While the cupcakes are cooling, prepare the peanut butter frosting
In a mixing bowl, beat the creamy peanut butter, powdered sugar, and heavy cream until smooth and creamy
Once the cupcakes are completely cooled, spread or pipe the peanut butter frosting onto each cupcake
Melt the semisweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth
Drizzle the melted chocolate over the frosted cupcakes
If desired, sprinkle chopped peanuts on top of the chocolate drizzle for added crunch and flavor
Allow the chocolate to set, and then your Chocolate Peanut Butter Cupcakes are ready to enjoy
