Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup applesauce
  • 1/4 cup apple schnapps
  • 1/4 cup vodka
  • 1/4 cup sour apple liqueur
  • 1/4 cup sour cream
  • Green food coloring optional
  • For the Appletini Glaze:
  • 1/4 cup powdered sugar
  • 1 tbsp apple schnapps
  • 1 tbsp vodka
  • For garnish: green apple slice and cocktail umbrella

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with cupcake liners

In a bowl, whisk together flour, baking powder, and salt

Set aside

In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in applesauce, apple schnapps, vodka, sour apple liqueur, and sour cream

Add green food coloring if desired for a vibrant green color

Gradually add the dry ingredients to the wet ingredients and mix until just combined

Divide the batter evenly among the cupcake liners, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean

While the cupcakes are baking, prepare the Appletini Glaze by mixing powdered sugar, apple schnapps, and vodka until smooth

Once the cupcakes are done, allow them to cool in the muffin tin for a few minutes, then transfer them to a wire rack to cool completely

Drizzle each cupcake with the Appletini Glaze and garnish with a green apple slice and a cocktail umbrella

Serve and enjoy your delicious Appletini Cupcakes
