The slow cooker cooks this hearty and healthy stew with lots of vegetables and lentils until its just right. This dish tastes great and is good for you without adding extra calories.
Ingredients:
- 1 cup dried lentils, rinsed
- 3 cups vegetable broth
- 1 onion, diced
- 3 carrots, sliced
- 2 stalks celery, chopped
- 1 can 14
- 5 oz diced tomatoes, undrained
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 cups spinach leaves
Instructions:
In a slow cooker, combine lentils, vegetable broth, onion, carrots, celery, diced tomatoes, garlic, thyme, rosemary, salt, and pepper
Cover and cook on low heat for 6-8 hours, or until lentils and vegetables are tender
Stir in spinach leaves during the last 30 minutes of cooking
Adjust seasoning if needed
Serve hot and enjoy
