Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- Red food coloring
- 24 small marshmallows
- 24 red candy-coated chocolate candies for Santas noses
- 24 white candy-coated chocolate candies for Santas eyes
- Black decorating gel for Santas eyes
- 1/2 cup powdered sugar for frosting
- 1 tbsp milk for frosting
- 1/4 tsp vanilla extract for frosting
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a mixing bowl, whisk together the flour, baking powder, and salt
Set aside
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the eggs one at a time, beating well after each addition
Stir in the vanilla extract
Gradually add the dry ingredients mixture to the wet mixture, alternating with the milk, starting and ending with the dry ingredients
Mix until just combined
Divide the batter in half
Leave one half plain and color the other half with red food coloring to make it red
Fill each cupcake liner with a spoonful of plain batter and then a spoonful of red batter, creating a layered effect
Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Allow them to cool completely
In a small bowl, mix powdered sugar, milk, and vanilla extract to make the frosting
Adjust the consistency if needed by adding more powdered sugar or milk
Frost the cooled cupcakes with a swirl of frosting
Place a small marshmallow on top of each cupcake for Santas hat, then use a small amount of frosting to secure a red candy-coated chocolate candy as Santas nose and two white candy-coated chocolate candies as Santas eyes
Use black decorating gel to create pupils in Santas eyes and a mouth to complete the Santa face
