One-Pot Spicy Noodle Soup

A quick and flavorful one-pot spicy noodle soup with a savory broth, tender vegetables, and shredded chicken.

Ingredients:

  • 2 cups chicken broth
  • 1 cup water
  • 1 cup sliced mushrooms
  • 1/2 cup sliced carrots
  • 1/2 cup thinly sliced bell peppers
  • 1/2 cup snap peas
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • 150g rice noodles
  • 1 cup shredded cooked chicken
  • Green onions for garnish

Instructions:

In a pot, combine chicken broth, water, mushrooms, carrots, bell peppers, and snap peas

Add soy sauce, minced garlic, grated ginger, sesame oil, and red pepper flakes

Bring to a boil

Reduce heat and simmer for 10 minutes until vegetables are tender

Meanwhile, cook rice noodles according to package instructions

Drain and set aside

Add shredded chicken to the pot and simmer for an additional 5 minutes

Divide cooked noodles into serving bowls and ladle the spicy soup over them

Garnish with green onions and serve hot
