Ingredients:
- 1 lb boneless, skinless chicken breasts, grilled and shredded
- 1 tbsp olive oil
- 1 cup diced yellow onion
- 3 cloves garlic, minced
- 1 jalapeno, seeded and minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 4 cups low-sodium chicken broth

- 5 oz can diced tomatoes
- 1 cup frozen corn
- 1 cup black beans, drained and rinsed
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
- Tortilla strips, avocado slices, shredded cheese, and lime wedges for serving
Instructions:
In a large pot, heat olive oil over medium heat
Add diced onion and cook until softened, about 5 minutes
Stir in minced garlic, jalapeno, cumin, chili powder, and paprika
Cook for another 2 minutes
Pour in chicken broth and diced tomatoes
Bring to a simmer
Add grilled and shredded chicken, frozen corn, and black beans
Cook for 10-15 minutes, allowing flavors to meld
Season with salt and black pepper to taste
Stir in chopped cilantro
Serve hot, garnished with tortilla strips, avocado slices, shredded cheese, and lime wedges
