Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 ripe avocado
- 1/4 cup fresh basil leaves
- 2 tablespoons Greek yogurt
- 2 whole wheat burger buns
- Lettuce, tomato, and onion slices for topping
Instructions:
In a food processor, combine black beans, kidney beans, breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, and pepper
Pulse until well combined but still slightly chunky
Divide the bean mixture into 4 equal portions and shape them into burger patties
Heat a grill or grill pan over medium-high heat and lightly grease it with oil
Grill the bean patties for about 4-5 minutes on each side until they are heated through and have grill marks
While the burgers are grilling, prepare the avocado basil cream
In a blender, combine the ripe avocado, fresh basil leaves, Greek yogurt, and a pinch of salt
Blend until smooth and creamy
Toast the whole wheat burger buns on the grill for a minute or two until they are lightly browned
Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a bean patty, a spoonful of avocado basil cream, tomato and onion slices, and finally the top bun
Serve hot with your favorite side dishes
