Ingredients:
- 1 cup raw cashews
- 1/2 cup unsweetened shredded coconut
- 1/4 cup fresh mint leaves
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1/4 teaspoon peppermint extract
- Pinch of salt
- 1/4 cup dairy-free mini chocolate chips
Instructions:
In a food processor, pulse the cashews until finely ground
Add shredded coconut and fresh mint leaves to the processor, pulse until well combined
Pour in melted coconut oil, honey or maple syrup, peppermint extract, and salt
Blend until a sticky dough forms
Transfer the dough to a bowl and fold in the dairy-free mini chocolate chips
