Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, melted
- 1/4 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup powdered sugar for coating
Instructions:
In a mixing bowl, combine the all-purpose flour, cocoa powder, baking powder, and salt
Mix well and set aside
In another bowl, whisk together the melted butter, vegetable oil, and granulated sugar until well combined
Add the eggs and vanilla extract to the wet ingredients and mix until the mixture becomes smooth and creamy
Gradually add the dry ingredient mixture to the wet ingredients and stir until a soft dough forms
The dough will be quite sticky
Cover the dough and refrigerate for at least 2 hours or until its firm enough to handle
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Take small portions of the chilled dough and roll them into 1-inch balls
Roll each ball in powdered sugar until fully coated, then place them on the prepared baking sheet, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes or until the cookies are set and have crinkled tops
Remove from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
