Strawberry Sour Cream Streusel Muffins

These Strawberry Sour Cream Streusel Muffins are a delightful treat with the perfect balance of sweet and tangy flavors. The moist and tender muffin is studded with fresh strawberries and topped with a buttery streusel for an extra layer of crunch and flavor. Ideal for breakfast or as a snack

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • For Streusel Topping:
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tbsp unsalted butter, cold and cubed

Instructions:

Warm your oven up to 350 F 175C and put paper liners in a muffin tin

Whisk the flour, sugar, baking powder, baking soda, and salt together in a large bowl

Put the sour cream, melted butter, egg, and vanilla extract in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

The diced strawberries should be added slowly

In a small bowl, mix the flour and sugar together to make the streusel topping

Add the cold butter and mix it in until the dough looks like big crumbs

Around two thirds of the way full, put batter into each muffin cup

Then, sprinkle the streusel topping on top of each muffin

After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick inserted into the middle comes out clean

For a few minutes, let the muffins cool in the pan

Then, move them to a wire rack to cool completely
