Cowboy Meatloaf and Potato Casserole

A hearty and flavorful combination of classic meatloaf and creamy mashed potatoes, topped with melted cheddar cheese. This cowboy-inspired dish is sure to satisfy your hunger and bring comfort to your table.

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1 egg
  • 1/2 cup barbecue sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley

Instructions:

Warm the oven up to 190C 375F

Take a big bowl and mix together the ground beef, breadcrumbs, onion, bell pepper, egg, barbecue sauce, salt, and black pepper

Make sure everything is well mixed

Put the meatloaf mix in the bottom of a 9x13-inch baking dish that has been greased

Put mashed potatoes on top of the meatloaf mix

Add some chopped cheddar cheese on top of the mashed potatoes

Place the meatloaf in an oven that has already been heated up

Bake for 25 to 30 minutes, or until the meat is fully cooked and the cheese is melted and bubbly

Add chopped parsley as a garnish before serving
