Fig, Arugula, and Fried White Sweet Potato Salad

This Fig, Arugula, and Fried White Sweet Potato Salad is a great light and healthy meal because it has a great mix of sweet and savory flavors. Putting together fresh figs, crispy sweet potato slices, creamy goat cheese, and crunchy walnuts looks good and tastes great. The balsamic dressing ties everything together with its sour and sweet taste.

Ingredients:

  • 4 cups arugula
  • 2 white sweet potatoes, thinly sliced
  • 8 fresh figs, quartered
  • 1/4 cup crumbled goat cheese
  • 1/4 cup chopped walnuts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions:

Preheat your oven to 400F 200C

Toss the sweet potato slices with olive oil, salt, and pepper in a bowl

Spread the sweet potato slices in a single layer on a baking sheet and roast for 20-25 minutes or until they are crispy and golden brown

Set aside to cool

In a small bowl, whisk together balsamic vinegar, honey, and a pinch of salt to make the dressing

In a large salad bowl, combine the arugula, quartered figs, crumbled goat cheese, and chopped walnuts

Add the roasted sweet potato slices on top of the salad

Drizzle the balsamic dressing over the salad and toss gently to combine

Serve immediately and enjoy
