This Chicken Salad with Pineapple and Miso Dressing is a delightful combination of grilled chicken, sweet pineapple, and a savory miso dressing. Its a refreshing and satisfying salad thats perfect for a light meal or as a side dish.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup diced pineapple
  • 4 cups mixed salad greens
  • 1/4 cup sliced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped cashews
  • For the Miso Dressing:
  • 3 tablespoons white miso paste
  • 2 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 tablespoons sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons water

Instructions:

Warm up the grill or grill pan on the stove over medium-high heat

Add salt and pepper to the chicken breasts

Grill the chicken for six to eight minutes on each side, or until its fully cooked and the middle is no longer pink

After taking the chicken off the grill, let it rest for a few minutes

Then, cut it into thin strips

Put the mixed salad greens, diced pineapple, sliced red onion, chopped cilantro, and sliced chicken in a large salad bowl

Its time to make the dressing

In a different bowl, mix the miso paste, rice vinegar, soy sauce, honey, sesame oil, minced garlic, grated ginger, and water

Add the miso dressing to the salad and mix everything together until its well covered

Add chopped cashews on top to make it crunchier and taste better
