A classic comfort food, chicken pot pie combines tender chicken, mixed vegetables, and a creamy sauce, all baked under a flaky crust.
Ingredients:
- 2 cups cooked chicken, diced
- 1 cup frozen mixed vegetables
- 1/2 cup diced onion
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon celery seed
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 package 14
- 1 ounces refrigerated pie crusts
Instructions:
Preheat oven to 425F 220C
In a saucepan, combine butter, onion, and cook until onion is translucent
Stir in flour, salt, pepper, and celery seed until well combined
Gradually stir in chicken broth and milk
Cook and stir until mixture boils and thickens
Stir in chicken and mixed vegetables
Fit one pie crust into a 9-inch pie dish
Pour chicken mixture into crust
Top with the second crust, seal edges, and cut away excess dough
Make several small slits in the top crust to allow steam to escape
Bake for 30-35 minutes or until crust is golden brown and filling is bubbly
