Easy Fresh Arugula Smoked Salmon Cucumber Salad

This salad doesnt have any gluten and is full of fresh tastes and textures. The spicy arugula goes well with the rich, smoked salmon, and the crunchy cucumber adds a nice crunch. With tangy feta cheese and a zesty lemon dressing on top, its a light and filling dish thats great for any event.

Ingredients:

  • 4 cups fresh arugula
  • 6 oz smoked salmon, sliced
  • 1 large cucumber, thinly sliced
  • 1/4 cup sliced red onion
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

Put the smoked salmon, cucumber, red onion, cherry tomatoes, feta cheese, and arugula in a large bowl

Mix olive oil, lemon juice, salt, and pepper in a small bowl with a whisk

Spread the dressing out on the salad and gently toss it to cover everything

Serve right away and enjoy
