Ingredients:
- 4 cups fresh arugula
- 6 oz smoked salmon, sliced
- 1 large cucumber, thinly sliced
- 1/4 cup sliced red onion
- 1/4 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions:
Put the smoked salmon, cucumber, red onion, cherry tomatoes, feta cheese, and arugula in a large bowl
Mix olive oil, lemon juice, salt, and pepper in a small bowl with a whisk
Spread the dressing out on the salad and gently toss it to cover everything
