Peaches and Cream Crepes

Indulge in the delightful combination of sweet peaches and creamy whipped cream wrapped in delicate crepes. These Peaches and Cream Crepes are perfect for a luxurious breakfast or dessert.

Ingredients:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • 2 cups sliced ripe peaches
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

Put the flour, eggs, milk, sugar, salt, and melted butter in a blender

Mix until its smooth

Put a nonstick skillet on medium heat and use cooking spray or butter to lightly coat it

Put a little of the crepe batter into the pan and swirl it around to cover the bottom evenly

For one to two minutes, or until the edges begin to lift, cook

After flipping the crepe, cook for an extra one to two minutes, until its just barely golden

Do it again with the rest of the batter

Mix the powdered sugar, vanilla extract, and heavy cream in a different bowl

Whip them together until stiff peaks form

Put sliced peaches in the middle of each crepe and then add a big dollop of whipped cream on top

Put the filling on top of the crepes and fold them over

Serve right away

You can also add more sweetness by drizzle some honey or maple syrup on top
