Ingredients:
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups heavy cream
- 1 cup mango puree
- 1/2 cup sugar
- 1 tablespoon gelatin powder
- Fresh mango slices for garnish
Instructions:
In a bowl, combine graham cracker crumbs and melted butter
Mix well
Press the crumb mixture into the bottom of serving glasses to create the crust
In a separate bowl, beat cream cheese until smooth
Add powdered sugar and vanilla extract, continue to beat until well combined
In another bowl, whip the heavy cream until stiff peaks form
Gently fold the whipped cream into the cream cheese mixture to create the cheesecake mousse
In a small saucepan, combine mango puree and sugar
Heat over low heat until sugar dissolves
Sprinkle gelatin over the mango mixture and let it bloom for a few minutes
Stir until gelatin dissolves completely
Fold the mango mixture into the cheesecake mousse
Spoon the mango mousse cheesecake mixture over the crust in the serving glasses
Chill in the refrigerator for at least 4 hours or until set
Before serving, garnish with fresh mango slices
